Wagyumafia Returns to Windy City Smokeout Featuring the Big Wag

Tokyo’s legendary Wagyumafia is back at the Windy City Smokeout dishing out their Big Wag burger. A childhood favorite of Chef Hisato Hamada, reimagining the legendary Big Mac was a dream come true. “The Big Mac was my favorite burger when I was a kid, and recalling how much I liked it then, I wanted to reinvent that quality but with high end wagyu,” he says.The Big Wag recipe retains the satisfying and familiar aspects of the Big Mac but with decadent upgrades such as 100% single-source Ozaki beef, hand-selected by Chef Hamada and Mr. Ozaki himself. As part of the special Wagyumafia Smokeout session, the Big Wag patty will have 3 different parts from the neck, shank and chuck, carefully double-ground with nothing else added – just pure wagyu – accompanied by a hand-crafted sesame bun, house-made sauce, crisp lettuce, fresh pickles and organic American cheddar cheese.

Chef Hamada is delighted to showcase the Big Wag in the US for the first time after a successful debut at the 2018 Opinionated About Dining Awards (OAD) in Europe. Check out Chef Hisato and the Big Wag on Saturday, only at Windy City Smokeout.
